1 cup (225g) Unsalted butter, softened to room temperature

1 ¼ cups Granulated sugar

1 Large egg + 1 egg yolk (for extra chewiness)

2 tsp Pure vanilla extract

2 ½ cups All-purpose flour

1 tsp Baking soda

½ tsp Cream of tartar

½ tsp Salt

½ cup Rainbow sprinkles (jimmies work best, as they don’t bleed color)


Instructions

Prep the Oven: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone mats.

Cream the Butter & Sugar: In a large bowl or stand mixer, beat the butter and sugar together for about 2-3 minutes until the mixture is pale and fluffy.

Add Wet Ingredients: Mix in the egg, egg yolk, vanilla, and almond extract. Scrape down the sides of the bowl to ensure everything is incorporated.

Whisk Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt.

Combine: Gradually add the dry ingredients to the wet ingredients on low speed. Mix until just combined—do not overmix, or the cookies will be tough! Fold in the rainbow sprinkles by hand.

Scoop & Bake: Use a cookie scoop to form balls (about 2 tablespoons each). Place them on the baking sheets about 2 inches apart.
