Pregnancy-Safe Sheet Pan Dinner: Nourishing Baked Trout & Veggies for a Healthy Glow
Eating well during pregnancy doesn’t have to be complicated or time-consuming. As an expectant mother, you need nutrients that support both your energy levels and your baby’s development. This Baked Trout and Spring Veggie recipe is a "The Mama Muse" favorite.
Trout is a fantastic, low-mercury alternative to other fatty fish, providing essential Omega-3 fatty acids for baby's brain development and high-quality protein for you.
Ingredients
2 Fresh Trout Fillets: High in iron and Omega-3 fatty acids.
1 Bunch of Asparagus: A natural source of essential folic acid.
1 Cup Broccoli Florets: Packed with Vitamin C and fiber.
Handful of Cherry Tomatoes: For extra juiciness and antioxidants.
1 Lemon: Half sliced into rounds, half reserved for juice.
2 tbsp Extra Virgin Olive Oil: Healthy fats for you and the baby.
Seasoning: Fresh dill, a pinch of sea salt, and a touch of garlic powder.
👩🍳 Cooking Instructions
Prep the Oven: Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper for the easiest cleanup ever.
Arrange the Veggies: Toss the asparagus, broccoli, and cherry tomatoes on the tray with 1 tablespoon of olive oil and a pinch of salt. Push them to the sides to make room for the fish.
Season the Trout: Place the trout fillets in the center of the tray. Drizzle with the remaining olive oil and fresh lemon juice. Top each fillet with fresh dill and a few lemon slices.
The Bake: Place the tray in the oven and bake for 15–18 minutes. You’ll know it’s ready when the trout flakes easily with a fork and the veggies are tender-crisp.
Serve & Glow: Enjoy your meal directly from the oven! It’s best served with a side of quinoa or brown rice for extra slow-release energy.
Why We Love It for Pregnancy:
One-Pan Cleanup: Because nesting is real, but so is pregnancy fatigue!
Brain Power: The DHA found in trout supports your baby’s cognitive and eye development.
Folate Boost: Asparagus provides folate, which is essential throughout every trimester.
